Pan-Seared Cod with Cherry Tomatoes

A light and flavorful Mediterranean-style fish dish featuring flaky white cod fillets, bursting cherry tomatoes, and aromatic herbs.

Ingredients

  • 2 cod fillets, 6 ounces each
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon capers, drained
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Place the cod in the skillet and cook for 4 to 5 minutes per side until golden brown and the internal temperature reaches 145 degrees Fahrenheit.
  4. Remove the fish from the skillet and set aside on a plate.
  5. In the same skillet, add the cherry tomatoes and cook for 3 minutes until softened.
  6. Stir in the garlic and capers, cooking for 1 minute until fragrant.
  7. Remove from heat and stir in the lemon juice and fresh parsley.
  8. Pour the tomato mixture over the cooked cod fillets and serve immediately.

Cooking tips

Use a heavy-bottomed skillet to ensure even browning. If the fish is thick, adjust cook time to ensure the internal temperature reaches 145 degrees Fahrenheit (63 degrees Celsius).

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop over low heat.
