Ingredients
- 2 cod fillets, 6 ounces each
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice

- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Place the cod in the skillet and cook for 4 to 5 minutes per side until golden brown and the internal temperature reaches 145 degrees Fahrenheit.
- Remove the fish from the skillet and set aside on a plate.
- In the same skillet, add the cherry tomatoes and cook for 3 minutes until softened.
- Stir in the garlic and capers, cooking for 1 minute until fragrant.
- Remove from heat and stir in the lemon juice and fresh parsley.
- Pour the tomato mixture over the cooked cod fillets and serve immediately.
